Soil Characteristics: Medium-textured clay with abundant skeleton from disintegrations of the yellow sandstone in “Casellini” with south-south-west exposure, and of alberese sandstone in “Le Piagge” with similar exposure. Altitude 360-420 m above sea level
Vine Training Method: Tuscan arched cane (capovolto) at “Casellini” – Guyot at “Le Piagge”
Harvest: Manual with rigorous selection of the grapes during the first half of October
Vinification: Temperature controlled vinification and extractive maceration for each individual variety of this wine are completed in oak barrels. Following racking the wines are fined in non-toasted oak barrels of 15 hl for a minimum period of six months before assembly and bottling.
