Philosophy of Production: Traditional
Food Pairings: First courses with ragù di carne, meat filled pasta (tortelli, cannelloni), appetizers of cold meats and crostini or mushrooms, main courses such as osso buco and scottiglia (beef stew).
Vinification: Pure vinification (every single type of grape). Fermentation in stainless steel tanks at a controlled temperature of 26-28°C. Fermentation and maceration for 12 days.
Ageing: Six months fermentation and ageing in second use Allier barriques.
Affinamento: Six months in bottle.
Wine of ruby red colour with purple reflections. Aromas of fruits of the forrest, pink pepper, vegetal and violet notes, enriched with spice, sweet tobacco and balsamic hints. The palate is a balance of fruity and vegetal flavours and round tannin, harmonised in a well structured body.
